Staff
Managers: Our front of house managers are Roberto Muscas and Carlos Ruiz. They have both been part of Le Café Du Marché almost from the very start in 1986 and have been pivotal to maintaining our consistent style and quality of service ever since. Roberto chooses the wines for our wine list.
Chefs: Our principal chefs are Simon Cottard and Phil Hayes. Simon trained with the Roux Brothers and has been part of the team at Le Café du Marché for over 20 years now. He and Phil are jointly responsible for planning our menus and ensuring the quality of every meal prepared by their team. The team includes Keith Davis, our pastry chef, who prepares all our desserts.
